Silverthorn The Dog Star – Barrel Fermented 2021

This wine is made entirely from Chardonnay grapes, which were grown in soils rich in shale and limestone. The process begins with a careful harvest, where the grapes are gathered as whole bunches before being gently pressed. The fermentation takes place in old 500-litre French oak barrels.

Finally, the wine is left to mature and develop, undergoing an aging period of 18 months while remaining in those barrels.
