Esona Sauvignon Blanc 2019


This lovely white wine is transparent in colour. It has chalky minerality characters on the nose and fresh gooseberries and kiwi fruit on the pallet.

Lees: Dead yeast cells and other particles remaining in a wine after fermentation. They settle as sediment or creamy mud at the bottom of the fermenting container. The container could be a tank, a wooden barrel or even a bottle.  This wine spent 3-5 months on the lees to create a creamier style of Sauvignon Blanc. Long lees contact also softens the acidity.

Made to mature well over 3 – 4 years.
